Tomorrow June 5, 2020! This is the limited release of 144 bottles. 2016 was a fantastic vintage, the grapes we harvested, destemmed/crushed and fermented without the addition of sulfites. Fermentation was at 70F, and the first 50% of fermentation was by native yeast, then cultured yeast was added to make sure we reached a dry wine. The young wine was racked 3 times by January 2017, then racked into French Oak Barrels, there it remained until December 2018, racked into a stainless tank and allowed to marry until July 2019. It was then bottled (un-filtered, un-finned) and has been aging in the cellar ever since. We are sharing some of this with you now, and may at a future date release another limited number of bottles.
